Fluffy Vegan Banana Pancakes
One of my favorite things to eat for breakfast is pancakes. I love to eat them with warm syrup. Over the years, I’ve tried to make them healthier. I’ve tried a few recipes, but this one makes me happy. Why? Because it has all natural ingredients. I’ve tweaked it a couple of times until I found the perfect combination. It’s so quick and easy to make. It’s breakfast dessert without the guilt.
I’ve made these with ground oats and oat flour. I prefer oat flour because it makes them more fluffy, however either way works. You can ground oats by putting them in a food processor. It takes less than a minute. Your pancakes will still taste great, I promise. Don’t forget to add your favorite topping like strawberries or blueberries. We’ve added dark chocolate nibs and let me tell you, we were licking the plate :). We hope you enjoy this recipe as much as we do.
1/2 cup oat flour
3 very ripe bananas
1/4 cup of non-dairy milk
1/2 teaspoon cinnamon
1/2 teaspoon vanilla
sprinkling of salt (about 1/8 teaspoon or less)
Mash the bananas with the oat flour until well blended. Add milk, cinnamon, vanilla, and salt. Stir until blended. Add to a hot griddle and cook evenly on both sides, flipping only once. Add your favorite toppings and enjoy!
