Chocolate Nice Cream

There’s nothing like ice cream on a hot summer day. When I was a kid my dad would show us how to make ice cream. It was a wooden barrel style machine that had a handle to churn. We’d add all of the ingredients, then the rock salt and churn away! My dad loved to add fresh peaches. It was delicious.

I wanted to make a healthier ice cream that my family could enjoy more often. It was a joy to find nice cream! There are so many ways to make it. We found this way to be our favorite. It’s made with cacao powder, vanilla, almond milk, and frozen bananas! The key to this being really good is using extra ripe bananas. Let them get very brown. The more brown they are, the more sweet. I like to top mine with raw cacao nibs and walnuts. If I’m really craving chocolate, I will put it on top of a raw brownie. That is chocolate overboard and so darn good. I hope you enjoy this recipe as much as we do.


3 very ripe bananas

1/3 cup almond milk (I prefer vanilla)

1/2 teaspoon vanilla

2 tablespoons cacao powder

Put all ingredients in a food processor and blend. Remove and eat immediately or freeze for later. Top with your favorite toppings such as nuts, cacao nibs, or fruit.
